Esprit de She Katy 5/10K – Fit Foodie Finishers

20140508_172245_1

snapping pics at the stop light and headed to meet the ladies who signed up to brave the Esprit de She 5 & 10K races with me last night! great times.  it did NOT rain on our parade either, thank God.

CYMERA_20140509_112948

no sunshine, but it wasn’t unbearably humid either as this SOLD OUT crowd of  gorgeous, fit, ladies gathered in anticipation and excitement. just look at that turn out! there was plenty to do, too. Zumba, healthy snack samples, Yoga, and chair massages & manicures were provided by Lifetime Fitness Lifespa.  this event totally catered to the She.

CYMERA_20140509_105444

i arrived early, headed to packet pickup, and ran smack into my friend Alexia and her hubby (he came for support, how sweet!). she is 1 week ahead of me @ 36 weeks preggo and was down to pound the pavement regardless. LOVES IT!  the shirts were a gorgeous purple color this year; it’s definitely one of my fave race tanks (racerback always rules in my world) that i will be hitting the gym in for sure.  also, because i registered early (big surprise there :o ), i was able to personalize my bib. coolness.

CYMERA_20140509_110600

the Esprit de She ambassadors got a group email going a few days before the race and decided to meet up for a pre-race photo under the Athleta tent.  did it happen? i couldn’t tell ya lol, but i was there and looking around for the other ladies. Landi found me, and then we somehow found Jennifer.  nice meeting you gals <3

CYMERA_20140509_111149

my friend Eshé (top L) has been taking my gym classes since i started teaching at 24 HF eons ago! she is now a Lifetime member and is training for another triathlon later this year.  she showed the 10k who was boss last night!!! so proud of her and she looks fantastic.   Alexia and i (top R) received SO MUCH bump love!! i was truly proud to represent for the fit preggo moms out there with her, you already know.  way to GO, Alexia.  we ran into my crazy-sock wearing fitness buddies Ros (Zumba instructor extraordinaire)and Karen on the way to the start line (bottom L pic) :) lastly, i finally got a pic with my Soror, Ayesha!  she’s a fellow Coog, blogger, and Esprit de She Ambassador as well.

CYMERA_20140509_113931

before and after!

as Alexia and i wrapped up our final mile, a woman who was driving by in her truck slowed down (and shouted over a/her child in the passenger seat) ‘you’re pregnant? and running? why??’ and sped off! my response? why NOT!? :?: i should have shouted to her to follow me on Instagram. lol. if she only knew :P

i know a lot of mommies-to-be that aren’t able to run at this stage of the game as the weight and pressure of the fetus is pretty high.  however, we used common sense, checked on each other constantly, and alternated between jogging (when we felt like it) and power-walking to get through the 5k.  mission accomplished!

CYMERA_20140509_112614

post-race, you KNOW what i was lookin’ for and where i can always be found- by the fuel!  believe it or not, the line on the right was for the free bubbly LOL!  i was so happy to just walk right up and get my southwest chicken wrap(S) and salad that were provided by the always healthy and delicious Lifetime Cafe.

i had a rockin’ time and hope to return next year. with or without a baby bump ;)

HAPPY EARLY MOTHERS’ DAY <3

thanks & giving & food & family 2013

i hope Thanksgiving 2013 was one to remember for you and your family.  here’s what we did:

_72

who eats like this on Thanksgiving Eve? sammiches and sushi @ Central Market.  it wasn’t as crowded as i expected AT ALL. is it weird that i wanted it to be?

CYMERA_20131127_204432

lemon ricotta pancakes for the boy.
20131128_070352

on TG day i sped downtown to run in the traditional Turkey Trot 10k and left Sonny and Chi in our nice, warm, comfy bed :(

_2

this is THE coldest weather i have ever run in. ever. 32 dang degrees. the Chevron Houston Marathon in January isn’t even this cold!!!!
_71

so because of the dip in temp earlier that week, i switched from the 10k to the 5k y’all. keepin’ it real. i believe i have become one of those people who like cold weather but hate being cold.

i met up with some bodybuilder and UH alum friends afterwards.

IMG_5222_1

FRIENDS DON’T LET FRIENDS RUN ALONE!!!! thanks for that, Charlene ;)

20131128_160637_1

PhotoGrid_1367247510811

after a restful friday night, i woke up Saturday ready to take on the Green 6.2 with a few Fit Foodie Finisher friends:

Ijeoma Ikechi

Ijeoma Okoli

  Ijeoma Ugoezi

YES, 3 Ijeomas ;)

PhotoGrid_1367247339008

they did their thing!!! so happy they were able to come out and run for the cause!  i enjoyed hanging out and learning more about them, and i look forward to growing our team.  i love the way fitness brings people together!!! the Houston humidity was present as always, but there was no rain and the temperature was perfect.

IMG_20130427_110456

obviously i missed the thumbs-up memo, whoops.  there were a ton of vendors at the post-race party held in the City Centre courtyard.  we refueled with bagels, bananas, muffins, and water.

there was also a kids 1k as well- look at little Superman!

PhotoGrid_1367249003316

i cannot WAIT to do that with Chiso!!! it was the cutest thing EVER.  the kids were all so happy to just run!

IMG_20130427_142554

after getting home a little later, i finally got to make my REAL breakfast, even if it was late afternoon!  i had fun fetti birthday cake pancakes (minus the fun fetti) and topped them with regular PB2 and fresh sliced strawberries. (recipe derived from GoSuperSisters)

light and fluffy pancakes

the stuff:

  • 1/4 cup coconut flour
  • 3 egg whites
  • 1/4 cup unsweetened almond milk
  • 1 tbs nonfat greek yogurt
  • 2 packets stevia
  • 1/4 tsp baking powder
  • 1/4 tsp vanilla extract

do this:

mix the dry with the dry, and wet with the wet.  slowly add the dry into the wet until combined.  batter will be THICK! cook them up on a medium heated griddle until golden brown on both sides.

IMG_20130428_222724

i put all entries (Facebook fan page, blog post commenters, IG (Instagram) reposts) into my random name picker app and it spit out these guys:

@raceylee109 – Tracey Spicuzza

@cboutarfa92 – Courtney Boutarfa

@gorgeouswifey – Brandy McGhee

i’ll be sending out their precious Fit Popcorn bags today, whoop!  i thank each of you ladies for participating and spreading the word about this giveaway.  i am so honored to be able put smiles on their faces, especially via free, healthy, FOOD!

peanut butter chocolate chick cookies

IMG_20130331_140618

happy belated Easter

20130331_090026

we got up early and had a big platter of whole wheat french toast with fresh strawberries, blueberries, sliced almonds, cinnamon, and Walden Farms pancake syrup to go with our egg white scramble that morning! my class was canceled cause of the holiday, so we went to my parent’s church on the other side of town.

my granny was also hosting an easter egg hunt for our family at her house, so late saturday night i whipped up the easiest thing i could find for the kiddos!  sugar-free Pillsbury brownies.

20130330_210759

i split the batter up into two round pans and morphed it into a bunny ‘cake’.  remember those!? i made them a few times when i was living at home with my ‘rents. i used cake then, though.

20130331_160416

i used the rest of a tub of white icing and some  sprinkles; luckily they were  Easter colors!   when i got to my granny’s house sunday, my cousin found me some jelly beans so i could give Bugs a face.  i hope you enjoyed your Easter weekend, however you celebrated:)

IMG_20130402_091545

yesterday’s IG collage just after teaching my early class….

so when the rain comes, not if…. get in the habit of going straight to God, every time. He has every single answer to every single problem we will ever have.  just a reminder ;)

speaking of IG, my girl @jazzythings posted her own pic of these cookies i made below after she found the recipe via Pinterest. she made them look SO darn good!! good enough to make me  finally crack open the garbanzo beans that have been sitting in my pantry for weeks! the verdict?

IMG_20130401_224144

are you kidding me? these are what’s hot in the streets!!! i don’t like being fooled into eating/making something that looks insanely delicious only to make it myself and be highly disappointed. that has happened more times than not on IG!!!! which is why i am taking my time with these ebook recipes to ensure that they not only look good, but taste FANTASTIC.  ok, back to these cookies that i was super skeptical about.   well, i’m driving the bandwagon now! see for yourself:

peanut butter chocolate chick cookies

the stuff:

2 cans chickpeas (garbanzo beans), rinsed and patted dry

1/2 cup chocolate PB2 (can sub full-fat peanut butter )

2 tsp vanilla

1 tsp butter extract

1/4 cup honey (or your fave sweetener)

1/2 cup dark chocolate chips (or more..it’s up to you!)

do this:

1. rinse and dry the chickpeas, then put them in to your food processor

2. add the honey, vanilla and butter extracts, and PB2 (mixed with water or unsweetened vanilla almond milk into a pb-like paste first)

3. blend until SMOOTH.  dump it all out into a mixing bowl, then fold in the dark chocolate chips.

4. spray your pan with no-stick cooking spray and form/roll into balls by hand. i made about 24 small ones!  bake them for 10-12 minutes in a 350 deg oven.

IMG_20130401_225405

me: ‘hey, Chiso….cookie?’

Chiso: NOMNOMNOMNOMNOM

moving on, i am UUUUBER excited about these ebooks, seriously! i’m cooking and eating, eating and cooking all day every day to make sure the recipes turn out PERFECT.  just a teaser!

IMG_20130327_220903

here are the sweet balsamic baked chicken breasts from monday’s night’s meal prep:

20130401_212414

they were for Sonny’s lunches for the next few days. during his lunch yesterday though, he felt the need to call and tell me how tasty this new flavor combo is, whoop whoop!

20130401_220713

just one of his:  raw carrots, creamy, ripe avocado, roasted brussels sprouts, and cherry tomatoes went alongside the chicken breast.

and fyi, he is now back on the competition trail for a few summer shows and i’m excited for him!!!!!!

yesterday, i went ahead and tried my hand at another favorite of mine that i don’t have often-
20130402_151156

healthy, clean, Cajun shrimp n grits bay-beee!!!!!

IMG_20130402_153316

ok, that’s enough teasers for one post.

20130331_085425

i’m glad i have this little taste tester around to help me :)

last thing- two more Fit Foodies have signed up to run in the Green 6.2 at the end of this month!!!!   do you see it over there in the side bar?  again, if you’d like to run with us, email me, like right now!  the price goes up the closer the race date gets.  le@fitfoodiele.com!

Q: have you ever used chickpeas to make dessert?

compound movements + let’s RUN!!!

how it went down eeeeearly this morning…

20130319_044033

i double (tea) bagged it (+ water, unsweetened vanilla almond milk, and stevia). i had to.  didn’t get much sleep cause i’ve been grinding on these cook books and they WILL NOT DEFEAT ME!!!!  i’m not yelling at you. i’m yelling at the cook books.  a little sleep deprived but the sacrifice will be worth it. it better beeeeee

let’s talk about something i incorporate into pretty much all my classes at the gym:

PhotoGrid_1363711696415

can’t get enough of compound movements and there are TONS of them. what are they?

‘multi-joint movements that rely on the coordinated actions of several muscle groups to move two or more joints through a range of motion’

the featured move of this post (up ^ there) combines squats (which is honestly a compound movement by itself since it works multiple parts of the body) and over-head presses.

Squats + overhead press

  • start with feet shoulder width apart, weights on either side of your body.
  • perform a low squat, pushing your glutes back, weight in your heels, knees behind your toes, back flat, head up, chest up.  have a seat in that imaginary chair!
  • bear all your weight on your left heel and while driving it into the floor, lift your right knee straight up towards your chest and perform your over head press simultaneously. keep your core tight, and squeeze the glute of the heel that’s on the floor. hard.
  • repeat on the right and make it a continuous, fluid movement by alternating your knees from left to right.

the heavier your dumbbells, the harder you work, and the more you burn!

*tip: working upper and lower body together is one of the best ways to burn fat.*

IMG_20130319_091205class went well this morning, can’t you tell from those disgusting sweat stains!?!?  i didn’t even notice them until after i posted the pic to IG. but that’s just how it goes down in my class .  if i could bottle the feeling exercise gives me….i’d sell it and retire at 30. good music gives me so much energy- i got a new cd and i know my members can tell i love it cause i keep playing it! good, loud music gives me energy through the roof!  i need all the energy i can get at 5:30am.

20130319_084151

then i came home to these babies. NOM. i threw the recipe together, but the base of it stemmed from the banana blueberry pancakes, if you’re wondering.
20130319_084356

i subbed the banana for 1 packet of stevia, then topped them with sliced almonds, raw, unsweetened, shredded coconut, and that big vat of walden farms pancake syrup back there.

WELL, i am so excited about the response concerning the Houston Color Run THIS Sunday, March 24th!  Thank you for your emails!  if you’d still like to run, you haven’t missed a thing- email me @ le@fitfoodiele.com and i’ll send ya the link to join team Fit Foodies.  however…my sincere apologies for not giving enough notice.  there were several people who wanted to run with Fit Foodies but the timing was just not right.  even for a 5k, training is very important, and some of the 1st timers need more of it.  i understand completely.  also, the race rates are cheapest when you register super early, and 6 days pre-race day is pushing it, i know!  so i’m super grateful, and thankful to all who have committed to running with Fit Foodies.

WITH THAT SAID,

green6.2

let’s do it right this time!  remember my Conn’s Green 10k post from last year??  if you’d like to get your run on with Fit Foodies for this event that is near and dear to my heart, come on then!  it’s special because it starts and ends in City Centre, one of my fave Houston hangouts, and also home to the best Lifetime Fitness in the entire universe!  #ithoughtyouknew.  if you’re interested, hit me up at the same email addy, and check out their site for details!

green

race date is Saturday, April 27th, 2013, and as always, same rules apply: walk, run, skip- however you gotta cross that line, just FINISH!

run ON! Bayou City Classic 10k ’13

IMG_20130309_065653

pre-race breakfast was 2 egg whites and a big bowl of expanding oats (1/2 cup rolled oats cooked in 1 cup water and 1/2 cup unsweetened vanilla almond milk) topped with frozen blueberries, banana chunks and cinnamon!  i normally don’t eat THAT much before a long run, but i woke up so hungry that i had to put something in my system that would stick.

20130309_074842

walking to the start line  with no rain this time!  last year it rained the entire race AND during the post-race party, boooo.

20130309_074902

 traditional feet pic

52-53 min and some change later,

IMG_20130309_092750

DONEZO! the route was a tad bit different this year and there were hills, hill, and mo hills, whew.  that Allen Parkway is a beast.

oh how i wish i could have taken pics of all the inspirational and funny things i saw:

1. i had just made it to the halfway point when a woman on a bike heading the opposite way yelled out ‘it’s fit foodie!!!’ are you kidding me!? if you could have SEEN my face light the heck UP as i cheesed, waved, and yelled hello back! i could not see you very well at ALL but THANK YOU FOR MAKING MY YEAR, LADY!!  XOXO!

2.  spectator sign: ‘don’t stop! ain’t nobody got time fo dat!’

3.  people often run in teams or ‘centipedes’ and are linked together by a rope of some sort so that they can finish together. teamwork at its finest!   i passed a team with a gentleman running alongside his IV.  i did a double take for sure!  yes, the stand with the wheels, the fluid bag, the WHOLE NINE.  he was out there doing his thing.  if he can….

4. one thing i did NOT witness was someone biting the dust, hard.  happens every year.  people, you gotta watch where you are going, especially running in the streets of downtown Houston. *knocks on wood*

20130309_085857

ran into a college buddy of mine just before hitting up the post-race party.  amazing run, Warren!

20130309_090136

first things first, had to get my t-shirt before the line got too crazy. this was nothin.

20130309_090417

i tucked it away in my bag cause i needed two free hands for all the samples i was about to acquire!! here we go:

PhotoGrid_1362891551283

could it be?  yep, Blue Bell ice cream sandwiches and fruit pops.

20130309_090533

stopped by the Clif Bar sample station,

20130309_090635peanut butter chocolate something!
20130309_090841

the My Fit Foods associate called this mixture ‘Morning Glory’.  it’s brown rice, eggs, lean ground turkey, and cheese all mixed together. it was good and something i’d throw together at home for sure.

20130309_091144

fresh fruit (bananas and oranges), cereal bars, and scones were provided by Whole Foods,

20130309_091409

and Fuel Kitchen supplied the breakfast tacos this year, not HEB.  they were delicious though- i had eggs and chorizo in mine.  a friend has been raving about the Philadelphia location to me and i can finally go experience the food for myself, sweet!
20130309_091122great turn out again this year!  always a pleasure and honor to participate in helping preserve Houston’s bayous, trees, and the environment :)

20130309_092619

goodie bag, food, coupons, t-shirt. it’s a wrap. time for a nap.

there were tons more sponsors there, check out the ones i didn’t mention.

labelbox_20130309_232941

4 years running and counting!

Q: have you eaten at Fuel Kitchen & Health Bar? is there one in your city?

le

it’s all greek to me

been starting out my early mornings with green tea lately!  it’s either this or instant coffee, but i sweeten both with stevia and a little unsweetened vanilla almond milk. yummy, low cal, creamy, and dairy-free.

20130305_044125

my Mrs. Dash collection is expanding gradually- i love all flavors of her no-salt line so far!  recently added was the southwest chipotle.

20130307_203344

chicken breast was this week’s protein of choice, and i used…20130306_210702

all of the seasonings!  not just one.

20130307_075857

done! 350 degree oven for 45-50 min.  ensure it’s cooked through for sure with a meat thermometer if you have to.

i used the sw chipotle on the bowl below that i had for lunch today cause we ran outta bread, man.  so brown rice it was!  i know i take sweet potato pics  for days on IG, but i eat all types of carbs.  whole wheat bread, pasta, brown rice, couscous, pearl quinoa….

20130308_124716

i’ve been a salad makin fool’ this week!  greek salad in particular.  that trip to Niko Niko’s really put me in the mood.

IMG_20130306_213442

this combo was wednesday night’s din din- a BIG salad for Sonny with grilled chicken,

20130307_113714

here’s yesterday’s lunch,

20130308_170201

and finally, today’s meal #3!  they are all different, but they’ve been a combo of the following ingredients:

  • romaine lettuce mix
  • low-fat string cheese
  • red, yellow, orange, green bell peppers (reg and mini)
  • vine ripe tomatoes
  • jumbo black olives
  • fat-free feta
  • fresh cucumber
  • avocado
  • banana peppers
  • red delicious apples
  • carrots
  • red cabbage
  • baked chicken breast

Q: what kind of salad dressing do you use?

A: just like you season your proteins and sides, season your salad!  topping them with some Mrs. Dash (or any low-sodium seasoning) is such a flavor BOOSTER. so pick your favorite one and sprinkle away!  i make my own dressing when i’m at home, and i’m in love with this one in particular right now: braggs apple cidar vinegar, braggs liquid aminos, agave nectar, and my seasonings (mrs. dash, parsley, oregano) all mixed together. even fresh lemon or lime juice alone works.

20130306_175824

maintainin’ and feeling strong these days! just an endorphin-high pic right after my gym session earlier this week.

20130308_172506

i haven’t done a 10k since Thanksgiving last year!!!! but i’m running in one of my favorite races (look over there to the right for more info on the Bayou City Classic) in the morning and i’m so excited.  this race has THE best post race snacks!  and NO i have not even been training for this thing so don’t ask  if this were a half marathon..then i’d be worried. but normally on race day for 5 and 10ks i just show up and run from start to finish with no serious training.  i know i won’t always be able to do that, and i strongly suggest you train correctly, stretch exceptionally, and get plenty of rest before your races.  do as i say and not as i do just this once ;)

so, about that cake….  i’m in love.  not only with the cake but with this girl.

20130308_193329

i adapted my recipe from her banana bread for one and it is PERFECT  i tell you, perfect.

20130308_193629
sweet cinnamon banana cake

the stuff:

  • 1 tbsp ripe banana
  • 3 tbsp whole wheat flour
  • 1 packet stevia
  • 1/2 tsp cinnamon (or more)
  • 1/4 tsp vanilla extract
  • 1/4 tsp butter extract
  • 1/4 tsp baking powder
  • 1 tbsp apple sauce
  • 1/8 tsp baking soda
  • pinch of salt
  • 1-2 tbsp unsweetened vanilla almond milk

do this:

  • set your oven to 325 degrees and spray an oven-ready tin with no-stick cooking spray.
  • mix the dry, mix the wet, then combine them. *banana lumps are actually cool cause it provides texture for the cake*
  • pour your batter in, and bake it for 10-12 minutes!

mine was slightly under done but i appreciated the gooeyness, are you kidding me!?  but if you like yours fully cooked, keep it in a lil’ longer but watch it.  there are no eggs, so no salmonella scares.

serving size = the whole thang

Screen Shot 2013-03-08 at 11.31.35 PM

sweet treat indeed!  around 100 cals, super low fat, and even has a little fiber in there.

it was topped with banana whip (fat & sugar-free cool whip + 0% greek yogurt + a ripe banana), Trader Joe’s cinnamon sugar, and i toasted and sprinkled on some organic unsweetened coconut flakes straight from the stove top.  HEAVENLY!

if you make this cake, show me!!! take a pic and post it to my fan page or tag me on Instagram!  i love to see your creations!

hitting the sack to prepare for tomorrow’s run. nite!

disaster recovery

we got back from Vegas monday morning at 6am and went straight to work from the plane.  didn’t sleep a wink on the flight or the night before.  however, Chiso did get some good sleep and snoozed the entire way home, WHEW.   you bet it was a long day that day.

while i attempted to catch up on rest, i neglected our empty fridge for two days!  i hadn’t grocery shopped on Thanksgiving eve in a really, really long time.  HEB’s parking lot was filled to capacity as expected, but as you see, they had every single lane open to accommodate the crowd.  take note, Walmart!!!!!!!!  AND, *big cheese* i happened to meet one of my readers in the store that night! i didn’t want to scare her off, so i screamed on the inside   shout out to Nneka from Austin! *waving*

i had just hauled my cart up to the belt when she quietly stepped behind me with her hand basket.   of course i told her to go ahead of me since she only had a few things (don’t you appreciate when someone does that!?) which is when she introduced herself.  just goes to show how you never know who knows you or who’s watching-  treat others how you want to be treated at ALL times.

soooo, how was your TG 2K12?!

mine started bright and early at the crack of dark.  i left Chiso and Sonny slobbering and snoring to run the annual Houston Turkey Trot 10K.  i love that the free t-shirt this year is long sleeve; that’s rare.  i have not run long distance in forever, smh, but my cardio @ the gym definitely helps keep my endurance up.

before i hit the road, i made and devoured these babies:

coconut caramel pistachio pancakes.

i used the base recipe for my banana pancakes and added the toppings- raw unsweetened coconut flakes, chopped bananas, Walden Farms caramel sauce, and crushed pistachios.

racing fuel!

might as well call these dessert pancakes- they were off the chain.

over 12k people laced up their running shoes and showed out on Thanksgiving morning.

i was standing around and counting down to start time and noticed the people around me had on such cool colorful running shoes!

i don’t like the front or the very back, but the middle serves me just fine!  i was about two minutes or so from the starting line.  and yes, i ran with my phone in my hand the whole time. i need a fanny pack.

finished around 50 minutes or so.

just wanted to support the cause and get some exercise… didn’t care about breaking or making any PR’s.

forgot to stop my watch immediately afterwards as usual, but i burned somewhere in the high 600′s. which was only like half of one of my Thanksgiving plates

my heart rate really got up there! normally when i do HIIT, i top out around 176 before my HR starts to decline.  when i heard a lady shout  ‘last mile!!!’ i turned my burners on and sustained my HR above 180 until i crossed the finish line. my legs and chest were on FIRE.

post race, you can find me by the food.

they gave out some flavored vitamin water, bananas,

and chewy granola bars.  chocolate chip, peanut butter, and a smores flavor.

i met up with my friend Nichola post race- she competed in Vegas for Fitness America Weekend as well!  always posing;)  and sorry Nichola, no donuts at the post race party LOL

by now i am almost sick to my stomach of seeing plates of Thanksgiving food on Instagram so i’m gonna chill on sharing mine.  i will, however, share my 5 ingredient dump cake recipe!  indulgent, um yes.  so you should prolly stick to making this on holidays only.

1. canned cherries. i was über happy to see this ‘no sugar added’ variety of cherry pie filling, but was bummed that it was still sweetened with Splenda. womp, womp. however i got it anyway cause the original stats were just way too high. i couldn’t do it.  i’m a changed woman.

2. pineapple chunks.  the ‘skinny fruits’ caught my eye like the manufacturers intended, but that big Splenda stamp ruined it again.

so, i grabbed what i always use- dole.  a little higher in the calories and sugar vs. the Libby’s, but it’s still all natural and no sugar added.

dump the can of cherries into a pan

followed by the pineapple chunks, juice and all.

3. box of yellow cake mix. it’s not pictured, and any brand will do.  pour it on top of the cherries and pineapple.

4. stick of butter  yeah, those are pads of butter.  they melt into the yellow cake mix when baking and form something so incredibly delectable and Paula Deen approved.  i mean you don’t have to use the entire stick though, and you could very well substitute it with a lighter whipped butter, Earth Balance, or Smart Balance spread instead.

5. pecans. sprinkle them on top before popping the whole thing in the oven for 1 hr on 375-400 deg.  no stirring required! hence the name, dump cake.

so…………how many times have you admired your Thanksgiving food baby in the mirror today?

do NOT let that or food guilt completely ruin the happy, positive memories of  Thanksgiving 2k12.  you ate those delicious foods cause you wanted to and you’ve been waiting all year for them.   you may have woken up with a tummy ache and the need to make a mad dash to the rr like i did this morning lol, but that’s OK.  like most people, i ate a lot of carbs  and white sugar: pie, cake, dressing, rolls, etc, so i did cut some of my carbs today to balance my intake, but i did not cut them out.  do this:

  • get back on track with your clean diet – do NOT starve yourself.
  • physical activity…asap.  hit the gym for your routine as normal, or go outside for a walk, jog, or run.   you’ll feel a lot better, instantly.
  • drink plenty of water  and green tea with each meal as it speeds up digestion.
  • let the food guilt GO.
  • chunk the leftovers or give them away.  if the temptation is too much, stop torturing yourself and get rid of them. liquid soap to the rescuuuuuuuue

i slept in this morning but i made my way to the gym eventually for some cardio and light leg work.

20 minutes of HIIT on the stairmaster (60 rest rate / 90 work rate), legs, then 40 minutes of steady state cardio .  yep, put in a little extra work to combat yesterday’s feasts.

i bought some chicken drumsticks a few weeks ago cause i could not pass up the sale price, so i went ahead and made them for dinner for the weekend.  we have been eating only chicken breast for……..a really long dang time!!!

it’s nice to eat a different part of the bird for a change. smokey chipotle paprika drumsticks.

i do hope your Thanksgiving was filled with family time, memories, lots of good food, and fellowship.

if i had ten thousand tongues, i could not thank the Lord enough!!!!!!!

turkey day 10k + november goals

happy NOVEMBER &  friday :)

let’s celebrate.  have some pancakes.

i made a big one for Chiso’s breakfast yesterday.  since he hadn’t had them in a while (we switched to Ezekiel’s cinnamon raisin bread for a little bit) he killed the whole thing in a few minutes.

it was topped with some cinnamon and a drizzle of walden farms pancake syrup.

SO, what are your fitness and nutrition goals for this month?  how often do you make goals anyway?  do you even make them? daily? weekly? monthly? making goals has become an incredibly useful tool for me now that i’m in off-season with my competition training.  whenever i write ANYTHING down (grocery list, an event, reminder, whatever) Sonny feels the need to remind me what year it is and to document things electronically.  well sometimes i don’t want to!  i mean seriously.  i enjoy writing out my grocery list by hand and crossing off items one by one while i’m at the store.  i just do.  i’m pretty sure it’s cause my mom did/does that.  i also like to group all my items together (frozen, produce, etc.) as i take them out of my basket and put them on the belt at checkout.  Sonny finally understands this and lets me do my thing   anyway, it will take me longer to type my entire list into my phone… and then what if it dies!?

i did a reverse selfie (which is way freakin harder to do than i thought) of my october progress which was to eat as clean as possible and to add more definition all over, especially my abs.  i stuck with my clean eating for the most part even though these weekend parties filled with pizza and cake got me a few times!   but i stayed inside my 80/20 rule, so it’s all good.  i also upped my weight training and decreased my cardio.  i’d love to stay where i am right right now so that when i compete again, i’ll be at an acceptable ‘starting’ place.

le’s NOVEMBER 2012 fitness and nutrition goals

  • continue to stay on track with my meal plan and clean eating
  • ENJOY Thanksgiving to the fullest – no meal plan, scale, nothin’ on that day
  • Run this 10K on turkey day —-> http://turkeytrot.shelteringarms.org/  and beat my current PR!
  • Add HIIT back into my current workout routine (sprints 2x’s a week)
  • Take my ab workouts more serious

ok those are mine!  whether you write them or type your goals, just make some.   i’m not just running a 10k so i can eat like a crazy woman on TG, but  i already planned to workout anyway.  i know my gym class will be canceled like it is every year, but i’d totally be there at 5:30am sharp for anyone who wanted to get in a great weight workout that morning.

have you ever worked out on Thanksgiving Day???

my little Ruggles Green lunch date from the weekend inspired me to throw a butternut squash in our grocery basket.

i threw the whole thing in the oven for about 20-25 minutes on 400 degrees.  after it cooled, i cut it in half, long ways.

i think i got pretty darn close to their Famous Butternut Squash.  in terms of taste, not looks, apparently.

at least Chiso thinks so- he liked it *wipes forehead*.   i used:

squash:

  • walden farms pancake syrup (instead of the maple syrup)
  • i can’t believe it’s not butter spray butter
  • few dashes of cinnamon
  • dash of salt

topping:

  • crunchy lite granola (bulk bins at HEB/Whole Foods)
  • coconut crystals (found at Whole Foods)

that’s all that’s in there and it was too simple to be that good.  i didn’t measure a thing though and just threw it together, fyi.  i was gonna cut it into chunks and throw it in the blender, but it was soft enough to just whip/mash up in a bowl by hand.  also,  i didn’t have graham crackers like the original recipe, but Sonny’s lite crunchy granola worked out fine.

does he look warm?  bless his heart.  i hadn’t been outside since my eeeeearly morning workout, so i assumed it was still pretty cool out.  not quite.

i took him out of the jacket and he took the hat off himself lol.  Moms, if you don’t have a jogging stroller, INVEST in one.  no gym membership required.  your post baby body journey starts with some good ol’ walking.  you’ll be jogging/running again eventually though, and you’ll be able to knock out two birds with one stone!  family time and exercise.  never let your little one be your excuse…only your reason.  we were blessed with this stroller as a baby shower gift and i am SOOOOO grateful for it.

i used the last of that fresh atlantic salmon we bought to make breakfast tacos for meal #4 that night.  i put this concoction together in my head while on our evening walk- fresh salmon, avocado, egg whites, shredded almond cheese all on a Ezekiel sprouted grain corn tortilla. yum!  the tortillas pretty much broke apart once i picked it up :( , but hey it all went to the same place.

we topped them with cilantro and salsa first.

after that, i went to my freezer for the next best thing since we’re outta salmon right now- tilapia!  i baked a few pans of garlic and herb tilapia in the oven so i could prep some more meals to get us through the week.

i also made so fresh steamed asparagus for our green vegetable. lots of lemon pepper and Pam.

meal #5  for that evening consisted of spaghetti squash i baked earlier in the week, tilapia, and asparagus. i just rolled up two fork fulls of the squash and made it look like little pasta nests.  then i sprinkled them with garlic and herb seasoning and some dried parsley.

Chiso and i are gearing up to support Sonny in his 2nd bodybuilding show this weekend!

we are so ready to cheer him on :)

a trophy would be awesome, but i get to bring the man home with me! whoop whoop!

grocery q&a

i set out to run a 10k today and did what i could.

it was hot though. this hot:

i hope you got in some good gym or running time today too!!

if you haven’t taken a stab at naming this smoothie yet, get on it, come ooooooon.  i’ll be picking a winner this Friday, June 8th.  sooooo many creative names to choose from so far though, goodness!  can you guess what the prize is?

don’t you hate when people do that? k i’ll stop.

did you see what i had for lunch today? i tweet what i eat often, even if i don’t make an actual blog post.  so look under Twitter Updates (on the right side bar of the page over there) when you come see me!  i’ll help you out just this once:

http://instagr.am/p/Liws4zRuKw/

i’ve received a few questions concerning grocery shopping – i’ll answer them right right now.

Q: how much do you spend and how often do you go!?

A: i usually visit HEB, Walmart, Sams, and Whole Foods.  every now and then i’ll visit Central Market for specialty items and prepared foods only, not real grocery shopping.   i’ll hit HEB and Walmart 2 or 3 times (beginning, mid month, and a quick stop) and Sams and WF once a month for bulk items (nuts,  cheeses, meats, etc).  i get all my fresh produce at HEB, and a majority of my frozen veggies come from Walmart cause they are the cheapest there.  since Chiso doesn’t eat a lot yet, he doesn’t really count as a 3rd person nor does he affect our grocery budget much at all.  fresh fruits and veggies go quick and last just about two weeks, if that.  so ok, YES i’m in HEB more like 3-4 times cause i just love it there, but Sonny and i sat down and agreed on 250 for the month.  and yep, i easily stay under that.

Q: do you seriously eat healthy all the time? do you ever buy junk food?

A: heavens no.  Sonny loves oreos, juice, and soda, and im a sweets fanatic.  however, i don’t buy it all at once though. why? cause we’ll eat it all at once.  i buy one or two snacks per shopping trip,  never a basket-full.  it’s either oreos or juice, but not both. (i have a ‘how to deal with sugar cravings’ post in the works riiiight now.)

super quick tips before i let you go:

    • stick to your list, use coupons,  and don’t go when you’re hungry. love, mom.  she’s right.
  • the good stuff (whole, natural, fresh) foods should always outweigh the not so good stuff (processed foods, sweets). take a long hard look at your grocery items as you put them on the belt to be rang up.
    • stop buying unhealthy stuff just cause they (kids, hubby, family members) love it.  Chiso would eat gerber graduate snacks for meals all day long if i let him.  that reasoning should never suffice when it comes to the health of your family. i do the grocery shopping and cooking in my household, so i’m in charge of feeding my family healthy, nutritious foods for their optimal health.  you have the power- fill them up with GOOD stuff.
  • put something new in your basket.  i’m convinced people turn their nose up at something different cause they’ve never had it before!  just cause it looks weird doesn’t mean it tastes weird.  everything won’t be a home run, but if you don’t try it you’ll never know.   stop speeding by that egg-plant (or whatever it may be)- put it in your basket and take it home with you this time.  you just might like it.

lastly, i entered the lottery for the 2013 Aramco Half Marathon today!!! been waiting 6 months on this thing to open up.

i’ll keep my fingers crossed.  my best 10k time was around 53 minutes, but i needed to finish under 51 and some change to automatically qualify for this race, shucks. *kicks rocks*
nite!
