Instructions
  1. preheat your oven to 400 degrees and cover your baking pan with foil.
  2. in a small bowl, melt your coconut oil and add cinnamon & vanilla
  3. split your acorn squash in halve and scoop out the seeds and guts with a big, solid spoon
  4. massage the coconut oil mixture in and around each of the acorn squash halves evenly, then add 1 tbsp of brown sugar into each squash half
  5. sprinkle each with a pinch of sea salt; bake for 45 minutes or until tender
  6. remove from oven. in a small bowl, collect/pour the brown sugar glaze that has formed and settled in the bottom of each squash half.
  7. fill each squash half with 1/2 cup yogurt, then drizzle the brown sugar glaze over the top. sprinkle with 1 tbsp pecans (per squash half) and grab a spoon!
