Happy Bump Day + Mexican Quinoa Bowls
with or without meat, this meal is healthy and full of fiber and protein!
extra virgin olive oil
low sodium chicken broth
fresh grilled corn
red bell pepper
low sodium kidney beans
can use black
add extra virgin olive oil to a large wok on med-high heat; add garlic and onion and toss around for about 1 minute
add ground turkey and spices and break up into chunks; cook through until done, about 5-7 minutes
i used my rice cooker for the quinoa and cooked it up separately!
remove the meat from the wok; add red bell pepper, sweet corn, and toss around for about 2 minutes on med-high heat until the red pepper becomes slightly tender
turn heat to low and add the remaining ingredients (green onion, beans, cilantro, cumin, and chili powder.) mix well, add turkey back in, and mix well again
spoon a serving into a bowl and top with shredded monterey jack cheese, avocado, and more fresh cilantro!
