Spicy Chicken Sandwiches
Kopy Kat version of Wendy’s Spicy Chicken Sandwich
boneless, skinless and split vertically to make 4 flat fillets
sweet, smoked paprika
split both chicken breasts vertically to make 4 thin cutlets, and set your cast iron skillet to med-high heat. add coconut oil
make an assembly line! put the beaten eggs in one shallow bowl (large enough to fit the the entire length of your chicken breast), and dump the spices in another shallow bowl (mix until combined)
coat chicken evenly in egg mixture, then cornstarch mixture next. immediately transfer chicken to your heated skillet and lay it flat in your pan
sear chicken for 3-4 minutes each side or until cooked through completely. remove cooked chicken from the pan and place it on a plate, cover, and let rest for 5 min.
i used potato buns and toasted them on my griddle. then i added shredded lettuce and the spicy creamy mustard. less is more. enjoy!
