if your cauli was frozen, let it thaw completely and pat it dry. break up the florets and add them to your food processor. pulse until it looks like rice! won’t take much. 10 secs max. no processor? rough chop the thawed cauli by hand.
heat a large wok or skillet over medium-high heat and add coconut oil and let it melt. add your onion next and saute until tender and translucent – 3-5 min. add cinnamon and stir.
add cauli rice and stir. add coconut milk. stir. saute it and stir continuously for about 5-7 minutes until all the liquid is absorbed.
add vegan butter and stir one last time! top with shrimp, serve warm, enjoy 🙂
