Clean Peach Oatmeal Crumble
yummy, lightened up version of a classic dessert

Instructions
  1. preheat oven to 350 degrees and coat an 8″ baking pan with no stick cooking spray
  2. in one bowl, combine oats, flour, brown sugar, melted butter, and 1/4 of the cinnamon; combine well.
  3. in another bowl, combine sliced peaches, extract, 1/4 tsp cinnamon, 1 TBSP of coconut or brown sugar, lemon juice, and arrowroot or cornstarch; combine well.
  4. add the peach mixture into your pan first and spread out. add oat crumble on top and carefully spread out over the peaches.
  5. bake for 25-30 minutes or until crumble is nice and crispy on top and peaches are bubbling.
  6. top with dairy-free whipped topping, cinnamon, and enjoy!
Recipe Notes

you could very well use light agave nectar for a lower glycemic option, but the crumble topping won’t exactly crisp after baking. i need that crunch factor though!
