happy fri-YAY, fit friends!
consider this the very first installment of something i’ve been semi-working on for months…maybe even years. yeah, prolly years. hello, it’s me, Procrastinator Patty (but my name is Leah). anyhoo,
is what i’m titling this project! this means that every friday i will post a healthier, cleaner, leaner version of a popular fast food item/meal. i’ve got my work cut out for me, but you, my dear reader, are so worth it and part of why i do what i do. up first, Sweet & Sour Chicken!
my hubby tasted this Sweet & Sour Chicken tonight and his first words after one bite were, ‘Pei Wei?’. i didn’t even tell him to say that, either!!! more like Pei Wha!? MISSION ACCOMPLISHED.
most versions use white sugar in the sauce and the chicken is deep-fried at some point, but i weaved my way around those methods and created something pretty darn phenomenal. i know you’ll agree!
i chose agave nectar because it’s lower on the glycemic index which means: diabetic friendly and weight management friendly. you wouldn’t have known that had i not shared that info though! you’ll see.
also, i know SSC is usually served with white or brown rice, but i went with quinoa. see why, here!
