the highlight of this past week was finally meeting the inspirational beauty below, Heather Lindsey, face to face!! she spoke at a women’s conference in Pearland, TX and i jumped at the chance to see her live. i loaded up baby Kosi and hit the road; long time coming!
if you’re an IG supporter of mine then you know i have enjoyed listening to and sharing her YouTube sermons for more than 2 years now. i love getting up at the crack of dawn to go workout / spend time with Him, and listening to her sermons are often times apart of my routine. for her to say, “it’s fit foodie!” as i walked up to her warmed and humbled my entire heart. you ever imagine how a convo would go in your head over and over and when it actually happens the words don’t even come out, LOL? ultimately i was just happy to be there! and talk about doing it all… she inspires me so much in that area, whew. 2 young kiddos, a husband, running a church, countless published books, organizations… man, i am barely scratching the surface over here! i know our paths, journeys, and desires are different, but she really makes me bite my tongue, stop spitting out excuses, and kick my bad procrastination habit. we all have work to do! she does not play when it comes to doing God’s will for her life and is intentional about her every move. when she is asked how the heck she is able to do all that she does, she stated in one of her videos: 1. by His grace alone and 2. she takes care of her temple. YES! i agree wholeheartedly! when you make time for Him and surrender your entire life (not just the parts you feel you can handle solo) then real, measurable, progress is made. she signed a copy of one of her many books, The Runaway Bride, for me and even included a handwritten message encouraging me to continue to trust in Him. i will do just that. what a blessed evening! the 2nd highlight of my week? this go-to healthy turkey chili recipe i’m finally posting! love whipping up a huge pot of this on those super cold winter nights….but i don’t really know what season it is in Houston these days 😐 . i mean really… it’s been cold like a collective 5 days, if that. maybe it’ll snow in February.
lots of fibrous veggies, fresh herbs, and lean protein, perfect for both a pre and postnatal diet. if you’re nursing, don’t go overboard with the beans (meaning eat it for lunch or dinner, not both)! if they make you crazy gassy, chances are baby will be too.super bowl is in ONE week, guys! where are you watching the game?
