these beans though. usually when i walk up to sample stations at the store i always hope for mac n cheese or salmon. lol. so when the demo guy told me he was sampling beans and sausage i was like *insert half/fake smile here*, “oh….ok.” i took the plate and naturally Chiso asked for my only piece of sausage so i was stuck with just beans. womp. after the first bite of them though, my face lit UP. i looked at the demo guy like, “…WAT did you just give me!?” are these magical beans?! why am i tasting tea…but it’s delicious? what the heck! the demo guy just smiled and said, “so those are Texas Sweet Tea Beans….” and continued on about the sausage but uuuuh, i only wanted to discuss these beans! i have never heard of such a thing nor did i know that sweet tea could actually be a marinade flavor. wow. i did not move until he told me how to make them step by step. my parents called earlier and said they’d be coming over after church the next day and my dad is basically a bean connoisseur. pintos are one of his faves so i wanted to impress him with these. perfect timing i tell you!
now, normally guys, i don’t do bottled sauces. they can be a big no-no, especially when i’m trying to change my body significantly and/or hit a fitness goal in a certain amount of time, ya know. they tend to be high in sugar/sodium and bloat me like craaaaazy so i always read my labels and stay mindful of the serving sizes when i do use them every blue moon. the stats for this particular brand were ok with me; i was only able to find it straight from HEB’s website or in-store though. if there’s an HEB by you, go get summa this stuff!! anyway, at 3 months postpartum, i have been pretty relaxed with my diet these days and just enjoying life with my kids to be completely honest. sure, i’m still reaching for nutrient dense, whole, low-no processed foods to keep baby Kosi and i nourished via breastfeeding, but i haven’t been turning down (dairy-free!) dessert either. no future body building shows (that’s a whole nother post in itself) or anything like that coming up; at this time i just desire to be a really fit, healthy example and mama.

we also had some yummy pan roasted chicken thighs! i marinated them in this stuff overnight. you can totally use chicken breasts instead.
the spread! I used the Weber grills Honey Garlic Rub + extra virgin olive oil on the brussels and roasted them for 20 min on 400 degrees. someone asked via IG if the rice (this kind’s our fave) was in a crock pot and nope, that’s a rice cooker. sadly, i have failed many, many times at attempting to make rice on the stove top. #icant it either turns out mushy or crunchy with no in between. no rice cooker, no rice under this roof. i pick my battles and i’m done losing this one….for now. maybe i’ll try again some day so Sonny can stop making fun of me. just not today #hairflip #andiknowyouseethosebrownies my parents cooked breakfast, lunch, and dinner for my bro and i daily growing up, so i LOVE and cherish being able to cook for and serve them when they visit.
my dad told me he enjoyed the beans and i enjoyed creeping on them while they bonded with their grand babies 🙂 . happy 39th wedding anniversary to those crazy kids!
