oh man. i got some hate mail about not getting this recipe up quick enough, lol! #whoops it’s here:got your food processor ready? gooooood. first up, cream sauce.
Spicy Avocado Cream Sauce (dairy-free)
- 2 whole, rip avocados, pitted
- 1 tbsp sriracha
- dash cracked black pepper
- dash sea salt
- juice of half a lemon
- 1 clove garlic
- 1/4 – 1/2 cup full fat coconut milk (until you reach your desired consistency)
blend until super-duper creamy smooth then set aside. next, make your noodles by spiralizing your zucchini. i have been using and loving my Spirooli for over 2 years now! you’re two-thirds of the way done! after you’ve de-shelled/veined your shrimp, sprinkle the Weber Garlic Sriracha seasoning on them evenly and mix well. you can marinate them if ya want… i didn’t and the flavor was still bangin’. shrimp cook crazy fast y’all; only 3-5 min total on med-high heat. once they go past that point, you’ll be in Rubber City 🙁 i transferred them to another bowl juuuust before they were done and let the residual heat finish them off. then i added the cilantro to the hot shrimp so it wouldn’t cook down and wilt so fast. cook up your mushrooms, combine, and bam!another paleo-friendly hit! this was SO good all mixed up together and coated in the cream sauce.

i hope you remembered to set your clocks forward in your home/car, but i am SO glad our phones and computers are designed to do it automatically! i was finishing up some prenatal plans at 1:55am sunday morning and i said, “ok leah, wrap this up and get in bed by 2.” 5 minutes later, 3am stared right back at me 😐 . i had seriously forgotten about the time change that fast.
anyway, we made it to church (on time, yaaaaaay) later and afterwards i skidaddled over to H & M to look around. running weather is upon us and i’m looking for cute, affordable running shorts. i don’t have nearly enough pairs!
as much as i love crops (especially this pair), i don’t like to run in them though.
